The Orion lunar exploration system can carry two rovers to either Mun or Minmus, deploy them and return to Kerbin. Seats one. 575 parts all stock, no dependencies.

Custom01 toggles atomic engine

Custom02 toggles landing engines

Custom03 toggles final stage engine

To deploy rover: Apply brakes. Lower LT-5 Micro Landing Strut. Then decouple Clamp-O-Tron Jr. retract LT-5 Micro Landing Strut if desired. If overturned, apply brakes and shift+run a kerbonaut underneath overturned rover.
